At Toff’s it’s all in The Mix!
Toff’s of Muswell Hill has been winning awards and accolades since its opening over 20 years ago. In fact, it was the winner of the first ever Seafish Fish & Chip Shop of the Year awards presented in 1988.

Owners George and Costas Georgiou who bought the shop in 1999 take pride in serving fresh fish bought directly from the UK’s fish docks. The fish is coated in a specially blended batter mix and deep fried in ground nut oil. The brothers have revealed to Fry magazine that their secret blend is actually a mixture of two Henry Jones Batter Mixtures: Henry Jones Light and Henry Jones Gold.
The brothers were given this recipe by the original owners of the shop who told them that three scoops of Henry Jones Light mixed with one scoop of Henry Jones Gold and very cold water would be the key to their success. And they were certainly right, as the shop has gone from strength to strength with improved sales of battered fish every year. George and Costas have found that the combination works better than anything, as it cooks evenly and stays intact for the duration of frying, as well as in the hot box. They’ve found that the batter does not break up and protects the fish in a delicious, sealed casing. Furthermore, the batter mix moulds to the shape of the fish and it contours, so that it stays thin and crispy – never becoming flat and thick.
At Toff’s as well as maintaining a focus on the quality of the ingredients used, the owners are committed to building a good team, through on-going training and development. This in turn is reflected in their excellent customer service and ongoing repeat business.
On their 10th anniversary of owning Toff’s, George and Costas have decided to run again for the Seafish Fish & Chip Shop of the Year Awards. They hope that their formula of a superb batter mix, fresh ingredients, a well trained team and satisfied customers will prove to be a winner. Though whatever the outcome, they are sure to keep enjoying an enviable level of business.
